Potato Pancakes, and Award


First, in case you are curious about the vegetable from the yesterday post, here it is:
Ta-da! Mister Cabbage...


Cabbage core is often discarded, but it is tender and full of nutrients part of this vegetable. 
I know you wander what on Earth I am going to do with twelve heads of cabbage?! Sauerkraut... :)

Now, this recipe of potato pancakes is from my mom's recipe book. Grandma had done it the same way, and, probably, so did the great grandma too. 
This digital days my blog became a notebook for me to keep the recipes. The benefit of this recipe book: everyone can cook from it.


Ingredients


Potato Pancakes 


Ingredients:



  • 2 lb potato
  • 2 large eggs, or 3 medium
  • 2 Tbsp with top flour
  • 2 medium onions, or one large
  • 1 tsp baking soda, mixed in a teaspoon lemon juice
  • 2 garlic cloves
  • 1/2 tsp salt
  • 1/4 tsp ground black pepper
  • Oil for cooking





Prepare all ingredients: peel and wash potatoes, onion, garlic. Use either cheese grater or food processor to shred potatoes, onion and garlic.






Combine in the mixing ball all the wet and dry ingredients, and mix well.
Set aside for about 10-15 minutes.


Shredded potatoes, onion, and garlic




Preheat oil of your choice in a cast iron skillet (or any other skillet). 
When oil is hot,  spoon the mixture into the skillet to form a small pancakes. 





Cook on both sides on a medium-high setting until golden brown. 
First pancake I usually make to taste to see if I need to adjust the salt and other seasonings.

Serve with vegetables, sour cream, any dressing or sauce of your choice. 
We love it with Squash Caviar or sour cream. 
Add some sauerkraut on a side, mmm... 
My son said he had it with ketchup...

    1. Lorraine, I think they are from the same family Rösti and potato pancakes. Rosti from what I know, are made only of potatoes (they grate a raw or par-boiled potato on a buttered skillet). And it has a form of a cake, actually, it has a form of the skillet. Potatoes are such a popular part of diet in European countries that I am sure every city, and every village has some type of potato pancakes. Thanks for reminding me of Rösti, I haven't had it in a very long time.

    1. Thank you Jenifer! I love cabbage (as you can see) in a winter and squash through the summer. And all time favorite for all seasons is senior Tomato! :) And potatoes too. Ummm, I guess I love all vegetables...

    1. Oh Suchi, you are so sweet! I am getting better, thank you. I was able to eat a little yesterday. I made myself some bread pudding with apples and cherries, no sugar. It was soft and came out actually very good, which I didn't expect, because I didn't follow any recipe (as usual), just mixed some ingredients and baked it: I was very-very hungry!       I've made a few more batches since that post though. At home my parents have a wine barrel for sauerkraut. So they make it in one attempt for a whole winter season. My red pot, the biggest I have, can hold only 25lb (10-11 kg) of cabbage, therefore I make it through the season several times. Usually we go through 80-100 lb (40-50 kg) of cabbage only for sauerkraut with February, March and April being the pick season for eating sauerkraut, interesting ha?!

    1. That would be a lot of soup! I do make soup with sauerkraut too, it an acquired taste though...:) We love it, it's one of my husband's favorite soups. How is the weather in Italy? Were you able to get your gas?
